Kale – Fresh Garden Recipes

This week…kale! My absolute favorite!

Isn't it gorgeous???

 

Like I said, kale is my favorite vegetable and it is sad because most people don't even know what it is!

It's a green, weird-looking leaf that is actually a type of cabbage. There, now you know!

It may look strange but it is a nutritional powerhouse! It ranks number one by the USDA because of its' different antioxidants and phytochemicals – how much it helps to fight cell-damaging free radicals.

Get some in your body this week with this delicious recipe!

 

Spicy Garlicky Kale

1 large head of kale

1 tablespoon extra-virgin olive oil

3 – 4 cloves of garlic, chopped

Pinch of red pepper flakes

Red wine vinegar

Sea salt and pepper

 

Directions

Remove the stems from the kale and coarsely tear or chop the leaves. Wash and drain well, but do not worry about drying them.

Heat a large saucepan and add about a tablespoon of olive oil and the kale.

Cook over high heat, stirring pretty consistently for 1 – 2 minutes.

Reduce heat to medium and continue cooking 4 – 5 minutes, stirring occasionally until tender. Add a splash of water if leaves begin to burn.

 

When the leaves are tender, push the kale to one side of the pan and add an extra drizzle of olive oil, garlic and red pepper flakes to the bare spot. Saute for 1 minute and then stir to combine with the kale.

Turn off the heat and add a splash of vinegar.

Season to taste with sea salt and pepper. Serve and enjoy!

 

I served mine with a quinoa pilaf and turkey meatloaf. It was so delicious!!!

Love this recipe!  Made the whole meal and loved it all.  Have never tried kale because I did not know how to prepare it.  It was delicious.  Will definitely have again!

HI Gary! Thanks for your comment. Kale’s peak time really comes in the winter depending on what part of the country you live in so don’t be discouraged, you will see more of it soon!
